Quiche is a very simple dish but so tasty that I have to make all the time. And it’s not only simple to make but it has hundreds of varients that you can create and you don’t need to use a cookbook or a specific recipe.
It probably happened on a Monday close to lunch (it could have been on a Tuesday but Monday sounds better 🙂 that I had this recognition of “OMG, what the heck am I goona make for lunch!” I have chicken breast in the fridge, some veggies and egg. Of yourse flours always can be found in my pantry. Let’s make quiche! It takes 10-15 mins to prepare and 30 mins to bake. So go for it and enjoy!
Ingredients and Method
How to make the Crust: Pulse approx 200g spelf flour (can be mixture of white and wholemeal spelt flour) and salt in a food processor until it is combined. Add approx. 90g butter and mix until moist crumbs start to form (no longer). Transfer mixture onto a floured, flat surface then form into a disc. Roll it out then place it in a rounded pie pan or dish, make sure you apply enough onto the side of the dish too. Don’t forget to grease the pan. Get a baking paper, place it onto the pastry and fill in with raw rice or beans and pre-bake it in the oven for 15 mins (this is called bling baking). Remove paper and rice then pour chicken mixture (instructions below) into the crust, sprinkle with cheese and put it back to the oven for about 20 mins.
And how to prepare the Filling: Â sear small cubes of bacon and one chopped leek. When these are almost cooked add slices of chicken breast. Season with salt, pepper and a some basil. When chicken is almost tender, toss in some handful of fresh spinach, pre-steamed broccoli and a clove of garlic, chopped.
In a separate mixing bowl whisk two eggs together, add 2-3- tablespoon of greek joghurt or sour cream, salt and add the chicken-veg mixture to the egg mixture. Blend it well and pour filling into the crust. Cover with grated cheese and bake it until cheese gets golden brown.
Tip: If you don’t want to waste your time making the crust, buy puffed pastry that you can easily roll out and place into the pie dish.
