Beetroot salad with pomegranate & chia seeds

I enjoyed the beautiful light today that was coming through our living room window. While I was preparing lunch and waiting for my family to arrive, I had to stop for a minute (okay, it was a little bit longer:)) to capture this beautiful bowl of beetroot salad.

We all loved the taste of this salad that I have to share the recipe with you, lovely friend!

So I am not going to overcomplicate things by give you a detailed recipe because it is so simple and I trust your creativity in the kitchen anyway:)

Just grate 3-4 middle beetroots, then mix in the following joghurt dressing and sprinkle a handful (or two) of pomegranate seeds and a tablespoon of chia seeds on the top.

Ingredients of the joghurt dressing:

  • 125g greek joghurt
  • 1 tbsp. olive oil
  • 0,5 tsp. dijon mustard
  • 1 tsp. fresh lemon juice
  • a bit of freshly grated horseradish or 0,5 tsp. horseradish sauce
  • little bit of honey
  • salt and pepper to taste

 

You really can’t go wrong with the proportions of ingredients. Someone likes it sweeter, other prefer it a more ‘horseradishy’ taste. Just experiment with the dressing and enjoy! Love you my dear! :)))
